Valentines. Candles. Home-cooked pasta. Stick to your heart healthy resolutions while enjoying some comfort food this weekend—or anytime. (bonus: these recipes are also vegan)

Fettuccini Alfredo Sauce

1 cup water

¾ cup cashews

2 tablespoons brown rice flour

1 tablespoon McKay’s Chicken Seasoning

1 teaspoon yeast flakes

½ teaspoon onion powder

½ teaspoon garlic powder

¼ teaspoon celery salt

Salt to taste, optional

Squirt of lemon juice, optional

2 cups soy milk

½ teaspoon dried basil

Whole grain pasta, penne or spaghetti

Combine water, cashews, flour and seasonings and blend until smooth. Add soy milk and basil. Transfer to sauce pan and heat until thickened. Serve over whole grain pasta.

 

Simple Cheese Sauce

1 cup cashews, raw

2 cups water

¼ cup pimentos, small jar

1 ½ teaspoon salt

2 teaspoons onion powder

2 tablespoons yeast flakes

½ teaspoon garlic powder

Blend all ingredients in blender. Transfer to sauce pan. Bring to boil, turn down heat and stir until thick.
